For Your Weekend

Hello friends. I hope you’re well. It’s been kind of a hard week. I’ve been struggling in some aspects of my life, plus all the events going on (natural disasters, the environment, North Korea…) cause me anxiety, partly because I feel that there’s nothing I can do. It’s also been grossly hot here (111 today) and the air is filled with smoke from wildfires.

I’m turning to self-care and taking the long weekend to recover and recharge. We’re staying inside to do what we really need to do right now: catch up on work and house chores. I’m also excited to start cooking from this cookbook, my new favorite!

I’ve decided to focus mostly on optimism and lightness in my roundup of links this week. Wishing you all the best this weekend. xo

    I was wondering if you had bought her cookbook! It is SO good! I have cooked exclusively from it for the past two months and have made so many tasty dishes!! If it ever cools down again…the minestrone soup is one of my favorites so far, along with the sweet potato enchiladas. But honestly everything I have tried has been a hit!

      Good to know! I’ll try those soon. I haven’t made much from the book yet since it’s been so hot, but I made the pasta w/ spinach twice this week. We love the vegan Alfredo sauce (a sauce like this is something we normally don’t think about eating because my husband can’t eat dairy). It is tasty, easy, and healthy! I loved the carrot cookies, too.

    Yes! We had the cashew Alfredo pasta last week and really liked it, and the carrot cookies have been in my rotation! The morrocan carrot dish is also great! I could go on forever….hahaa 🙂
